30 Aug 09 |Thai Green Curry (again?) nah, its a full recipe

I had this game here teaching how to make Thai green curry before :

今天是真的教煮哩

Ingredients:
- Green Curry paste.
- Vegetarian fish sauce (or you may skip that - I found the different isn’t big without it.)
-1 tsp. brown sugar (optional)
- 3 green chillies, deseeded (adjust according to desired spiciness, I put 8 :-D)
- 1 pack of kaffir lime leaves
- 1 can coconut milk
- Thai egg plants
- 1pack of sweet basil
- Optional: other vegetables of your choice,
if I go to the big thai store in Kowloon City or Wan Chai I would buy more different of kind Thai egg plants , but today I only went to the small store near my house and have only one kind of Thai egg plants.

材料:
﹣青咖喱醬包
﹣素食魚露(其實不用也可以,我發覺分別不太大。)
﹣一匙椰糖(隨意)
﹣三隻辣椒﹣我放了八隻:-D
﹣一包檸檬葉
﹣一罐椰奶
﹣泰國矮瓜
﹣一包Sweet Basil
(中文譯法有幾個,金不換,甜羅勒,九層塔。。。
我也不知是哪個)
﹣如果我是到九龍城或灣仔的泰國食品店,我會多買幾種泰國矮瓜的,但今天只到離家不遠的小店,所以只買了一種最主要的。你們可按自己喜歡多買幾種。

1)
Cut the egg plants into small piece, soak them with salt and water.
把矮瓜切成小塊,用鹽水浸泡。

2)
Kaffir leaves snipped into strips, but not too small - because this is the only thing in the dish that you can’t actually eat :-) its for the taste and without it the green curry wouldn’t taste like green curry :-) . if you cut it too small its hard to pick them out when you are eating.
Cut chili small, sweet basil pick the leave and the soft part of the truck.
檸檬葉切小片/條,不過不要切太小,因為這是全個菜中唯一不能吃的東西,切太小很難在你不想吃到它時揀出來:-)
但沒有它不又行哦,味道不夠好。
辣椒切粒,sweet basil拔葉和枝的軟部份。

3)
Open coconut milk, put a little (around 5 table spoons) on the heating pan.
開棷奶罐,倒約5茶匙份量的棷奶在熱鍋上。

4)
Put all the green curry paste into the pan mix cooking with the coconut milk.
把整包青咖喱醬放進熱鍋跟棷奶一起煮。

Pour the more than half can of remaining coconut milk, add in chili, then kaffie leaves, keep stiring.
把整罐剩下的椰奶一半以上倒進鍋裡,再加入辣椒和檸檬葉,拌著煮。

6)
Add in the egg plants, cook for around 3 minutes
加入矮瓜,煮多約分鐘。

7)
Finally pour the whole can of remaining coconut milk, add in sweet basil, stir another 5 minutes. add in sugar and vegetarian fish sauce if you want to now.
最後把整罐剩下的椰奶倒進鍋裡,再加入sweet basil,拌煮多五分鐘。如果你要放素魚露和椰糖現在要放了。

8)
This is the Thai rice noodles cooked before I start making the green curry. you will eat the green curry with the noodle, or you can replace it with rice.
這是在我煮咖喱前預備好泰式麵條。這是用作伴咖哩吃的,
也可以用白飯代替。
